My recipe is sweet potato rounds with herbed ricotta and walnuts.
It is easy to prepare.
In fact, you can prepare everything ahead of time and stick them in the oven when guests are arriving.
It’s just a little something healthy to nibble on until the big meal is served.
It is light enough that it won’t fill you up, so you will still have your appetite for the turkey dinner.
The colors in this appetizer include all the colors of Fall and are sure to be a nice accompaniment to your meal, as well as your decor.
Who doesn’t like to match their food to their surroundings? Ha!

These little rounds are cut thin, covered in avocado oil and sprinkled with salt and cinnamon before being roasted to a crisp.
They almost act as little crostini’s, only healthier.
Topped with herbed ricotta and baked until bubbly, these sweet potato rounds with herbed ricotta and walnuts will have your guests coming back for more.
The best part in my opinion is the dried cranberries on top!
Serve them on a charcuterie board and sprinkle in some herbs for a beautiful presentation.

sweet potato rounds with herbed ricotta and walnuts
Yield: 24
Ingredients
- 1 large sweet potato, sliced into ¼-inch rounds
- avocado oil
- sprinkle of cinnamon
- Herbed Ricotta:
- 1 cup whole milk ricotta cheese
- 1.5 teaspoon Italian seasoning
- 1 Tablespoon honey
- salt to taste
- Topping:
- 1/2 cup raw walnuts, roasted and chopped
- handful of dried cranberries
- drizzle of honey
Instructions
- Preheat the oven to 400 degrees. Slice the sweet potato into 1/4″ slices and place in large mixing bowl and drizzle with avocado oil. Sprinkle salt and ground cinnamon over rounds. Make sure both sides of the sweet potatoes are coated in oil. Arrange rounds on a large baking sheet Bake for 20 minutes. Flip the rounds, then bake for another 17 to 20 minutes, or until rounds are cooked through and crispy on the edges, but not burnt on the edges. Watch carefully.
- Add all of the ingredients for the herbed ricotta to a small bowl and stir well to combine.
- Spread walnuts on a baking sheet and roast them for 10 minutes. After removing from the oven, chop into tiny pieces.
- Place oven on high broil setting and move the oven wrack second to the top shelf. Place a dollop of herbed ricotta on each sweet potato round and place in the oven for 1-2 minutes, just until ricotta is melty and warm.
- Add chopped walnuts and dried cranberries to the rounds. Drizzle with honey and serve!
