Breakfast casseroles are made frequently in our house. I think it’s a great way to get your protein and veggies all in one dish, and the different combinations are endless!
We have breakfast casseroles for dinner sometimes too, and they are always so good re-heated the next day.
Christmas brunch is a great time for an egg dish like this too. The cherry tomatoes and the spinach give it those Christmas colors!
Today I want to share with you one of our family favorites, but feel free to tweak the recipe to your liking!
sausage & spinach egg casserole
Ingredients
- 1 lb. Italian sausage
- handful of fresh spinach
- 1 tsp. minced garlic
- olive oil
- 8 eggs, beaten
- 1 cup jack cheese
- handful cherry tomatoes, halved
Instructions
- Brown the Italian sausage over the stove in olive oil with the garlic. Add the spinach and continue until wilted.
- Remove from heat.
- Beat 8 eggs in a large bowl and then mix in sausage mixture. Add 1/2 cup shredded jack cheese.
- Pour into greased baking dish and top with remaining cheese and cherry tomatoes.
- Bake at 350 for approx. 20 min or until set.
