On the 4th of July a friend of mine brought over this chili cheese corn salad to go with our BBQ and I couldn’t stop eating it!
I texted her the very next day to get the recipe and thought I would share it with you all, as it will become one of your favorites too.
It has just the right amount of crunch with the corn, bell peppers, and Fritos.
Just the right amount of zing with the chili cheese Fritos, without being spicy.
Yet it is creamy and mild with the dressing and shredded cheddar cheese.
This is the perfect salad to bring to a potluck this summer, and it also goes along side grilled chicken or steak beautifully!
Not only is it delicious, but it is super easy to make!
Ingredients-
2 cans whole kernel corn
1 1/2 cups grated cheddar cheese
1 cup chopped red bell pepper
1/4 cup chopped green onion
1/2 cup mayonnaise
1/2 cup sour cream
1 {10.5 ounce} bag coarsely crushed chili cheese corn Fritos
Salt and pepper to taste.
Instructions-
In a large bowl, toss together corn, cheese, red pepper, and green onions.
Stir in sour cream and mayonnaise.
Stir in corn chips just before serving.
Sprinkle some on top for garnish.
Season with salt and pepper.
