How to serve chicken salad-
Chicken salad can be served so many ways. Eat it as is for a high protein lunch! If carbs don’t matter to you, my choice is served in a croissant! You can also add them to tortillas, or serve it on a bed of lettuce.
- Make the dressing. In a large bowl, whisk together all the dressing ingredients.
- Prep the chicken. Chop cooked and cooled chicken and place into the bowl with the dressing. Using a rotisserie chicken is the way to go in my opinion.
- Add the other ingredients. Gently fold in the red onions, olives, and green onions.
Some additional things you can add or sub in/out are: Sliced almonds, halved red grapes, curry powder, and or celery! It is fun to experiment with adding and subtracting different ingredients until you get the perfect blend. The above recipe is my favorite one, what is yours? This looks so good! I love that it has yogurt in the dressing to make it a little lighter.
