I love making extra loaves and freezing them for an easy grab and go breakfast or snack.
Try these as muffins too! Simply grease the bottoms only of 24 regular-size muffin cups. Fill cups about 3/4 full. Bake for 20 to 25 minutes or until the tops spring back when lightly touched.

You can add in dried cranberries or chocolate chips to get a whole new flavor!
We prefer chocolate chips, and semi sweet are the best in zucchini bread.
My mom used to make zucchini bread all the time and this brings back those memories.
I love the way the house smells while it is baking, and I love snacking on this bread all year!
