I have the most delicious no bake lemon cream pie recipe for you today as well as well as some very yummy Mother’s Day brunch ideas. Make sure you read all the way to the bottom of this post so you can see all those. But for now I would like to share with you this tempting treat! It is perfect for Mother’s Day, however, it is so simple, you really could make it for any occasion. Lemons scream spring to me, and while we are not quite there yet, it is right around the corner. This no bake lemon cream pie combines the tangy taste of fresh squeezed lemons with delicious mascarpone and sweetened condensed milk, as well as heavy cream. The combination is so good and will have you coming back for seconds. If you are hosting Mothers Day this year, you can make this the day before! It needs to set up in the refrigerator for at least 6 hours, so it is the perfect dessert to make ahead of time. Garnish it with sliced lemons and whip cream for a perfect presentation!
Ingredients needed-
1 store bought graham cracker crust 8 oz mascarpone cheese 14 ounce can sweetened condensed milk 3/4 cup heavy whipping cream 1/2 cup freshly squeezed lemon juice
Directions-

In the bowl of a stand mixer fitted with the paddle attachment beat mascarpone cheese at low-medium speed until smooth, about 1 minute.

Slowly add the sweetened condensed milk into mascarpone until smooth.

Add the heavy cream and mix until combined.

Slowly add the lemon juice to the mixture while beating at low-medium speed. The mixture will start to thicken and it will get creamy.

Pour into your graham cracker crust and refrigerate for at least 6 hours or overnight until firm.
- Garnish with lemon slices and whipped cream

*TIP* To make this look more “custom” I used my own white baking dish and transferred the graham cracker crust over to it, pressing it firmly into the bottom with a little melted butter. Be sure to pin this recipe to your dessert boards.
