The best chili you will ever make, hands down.
I made this for guests we had over last week, and while it is always scary trying a new recipe out on friends, this one won them over!
Chili is such an easy thing to make, yet so hearty.
Especially good on a cold rainy day.
And let me tell you, right now in Seattle, we are getting a lot of rain!
The leftovers are even better in my opinion.

This chili combines ground beef and ground pork for a delicious combination.
Three kinds of beans and a surprise {at least to me} ingredient, enchilada sauce!
I stumbled across the recipe on Pinterest from The Modern Proper and knew I had to try it.
I tweaked it just a tiny bit and will share the recipe at the end of this post.
You can make it in a slow cooker, but I made mine over the stove in a dutch oven.
Your house will smell amazing too.

I served this with shredded mozzarella cheese rather than cheddar and I liked the mild flavor paired with the chili.
Green onions, lime wedges, cilantro, and sour cream are always a good idea with chili!
I also sliced up an avocado which added a great texture.
Having everything prepared ahead of time makes this a simple meal when entertaining.
Don’t all the ingredients look pretty too?
You can leave this on simmer for up to 8 hours for a rich blended taste.
However, if you are short on time, you can let it simmer for an hour before serving.
I left mine simmering for 8 hours and it was perfect!
