It’s been a while since I’ve posted a recipe.
Since I’m on a health food kick I thought I’d share with you what I made for lunch yesterday.
I started out by cutting up tortillas into triangles, then dipping them in lime juice.
I laid them evenly on a cookie sheet sprayed with cooking spray and lightly salted them.
Bake at 350 for 7-10.
Watch carefully so they don’t burn.
The dip idea I found on Pinterest.
I didn’t really measure anything.
I just mashed 2 avocados and mixed it in with
shredded chicken, lime juice, salt, and pepper.
Very yummy and very simple.
I think I will keep these recipes in mind for summer picnics!

Sounds yummy, and I love that is was so simple.
Looks yummy, but not healthy. I only eat 100% whole wheat tortillas. I'm kind of a health nut, so only whole grains for me. I love avo! I will definitely be trying this, maybe even today!

I made it and loved it! I used my fave whole wheat tortilla (only 50 cals!), but baked it whole and didn't cut it. I spread the mashed avo on it, then topped with the chicken and also dived tomatoes and onions. It was soooo good. Sometimes I feel like I'm missing out on Mexican food because I don't eat fattening cheeses, but I didn't feel like I was missing out on anything with this. It was basically a healthy version of a Mexican pizza or tostada. Thanks again for sharing! I did modify it, but wouldn't have made it at all if I hadn't seen your recipe here.
