No bake cookie dough bites are just the right size for when you are craving a little chocolate! Super simple to make and will curb that sugar craving instantly! I remember growing up and my mom making chocolate chip cookies. I would always dive into the dough before the cookies even went into the oven. Please tell me you did this too! Even as an adult, I honestly do the same thing. However it isn’t supposed to be the best for you, so I started looking into no bake cookie dough bite recipes, and you guys, these are delicious! I even sprinkled on some crushed peppermint candies for the season, which not only is pretty, but it is delicious too! The best part, no baking necessary!
Here is what you need to make these no bake cookie dough bites.
Ingredients-
1/2 cup butter 3/4 cup light brown sugar 1/3 cup sugar 3 Tablespoons heavy cream 1 teaspoon vanilla 1.5 cups white flour 1/2 – 1/3 cup mini milk or semi sweet chocolate chips + extra for drizzle
How to make these no bake cookie dough bites-
1- In a mixer, blend the butter and sugars until fluffy. Beat in the cream and vanilla. Little by little, add in the flour and mix. Mix in mini chocolate chips. 2- I used a melon scooper to scoop the dough out into even pieces. Roll them into balls and then place on wax or parchment paper. 3- Once they are all scooped out and placed on a cookie sheet you are going to drizzle them with chocolate. To do this, place about a 1/3 cup of chocolate chips in a bowl and microwave in 20 second intervals until melted. Stir in-between intervals. 4- After you drizzle them with melted chocolate, place in the refrigerator until firm. 5- If you wish to sprinkle with chopped peppermints, you can do so just before serving!
