Ingredients:
Premade graham cracker crust, or make your own! Heavy whipping cream. Vanilla. Cream cheese. Powdered sugar. Lemon. For the topping I used raspberries, strawberries, blackberries, and fresh mint for garnish.
How to make-
Make your graham cracker crust or use a store bought premade one. In a mixer, mix the whipping cream with the vanilla until stiff peaks form. Set aside and mix the cream cheese, powdered sugar, lemon juice and lemon zest. Gently mix the whipped cream into the cream cheese mixture, but do not over stir. Fill your graham cracker crust with the filling and top with berries. Refrigerate for a minimum of one hour and garnish with mint before serving. Be sure to pin this recipe and print it out!
Typically fruit tarts are made with a shortbread crust. The graham cracker crust is a nice alternative to the traditional recipe, not to mention it also saves time when using a store bought one. I love a good hack whenever I can find one! This no bake fruit tart has all the tastes and textures you want in a dessert: a crunchy buttery shell, filled with smooth vanilla pastry cream and topped with an assortment of just barely sweet fresh fruit.
