This comfort food is great for the pickiest of eaters.
It’s an all American favorite crock pot meal that everyone will love.
It doesn’t matter what time of year it is. This is so good year round served with hearty crusty bread and my favorite, red wine.
What is hobo casserole?
Hobo casserole, also known as hobo stew, is a type of stew said to have been prepared by American hobos in camps in the early 1900’s.
It is the perfect combination of meat, veggies, and delicious sour cream and cheese.
While this makes a delicious dinner, it is also equally as delicious re-heated for leftovers for lunch or dinner!
Made in the slow cooker, you will love, love, love this!
Ingredients
1 pound of ground beef or ground sausage, pre-cooked and drained
2 cups of potatoes, cubed into 1″-2″ pieces
1 medium onion, diced
1 can of 10.5 ounces cream of mushroom soup
2 cups of  beef broth {you can use chicken broth in a pinch}
1.5 cups of uncooked macaroni noodles
1/2 cup of sour cream
2.5 cups of shredded cheddar cheese
Salt and pepper to taste
Directions
1. In sauce pan, brown ground beef and drain excess fat.
2. Grease slow cooker and add beef, onion, soup, and potatoes. Season. Stir and set to high for 3 hours.
3. After 3 hours, add broth and uncooked macaroni. Cover and cook for 30 minutes on high.
4. Stir in 2 cups of cheese and sour cream. Sprinkle 1/2 cup cheese on top. Cover and cook 20 minutes.
I like to transfer it to a baking dish for presentation purposes, sprinkled with a little cheese melted on top!
