Homemade 4th of July popsicles
You will need the following for this recipe. I will also add a printable version at the bottom of this post for you! Be sure to pin any of these images so you can refer back to it easily. There are layers to these popsicles which makes them so pretty as well as delicious. The red layer consists of- Strawberries, cornstarch, sugar or sugar substitute, and lemon juice. The white layer consist of- Vanilla greek yogurt, cornstarch, sugar or sugar substitute, and milk. You can use coconut milk or almond milk as well! The blue {or purplish} layer consists of- Blueberries, cornstarch, sugar or sugar substitute, and lemon juice. You can also substitute in honey in place of the sugar if you prefer.Why cornstarch?
Cornstarch will keep these ingredients creamy for a delicious texture!
Instructions-
I did not keep tabs on how much of each ingredient I was using. Start with the red layer and add all the ingredients to a blender. You will want the consistency to be pourable, so not too thick, but not too runny either. You can add more lemon juice or more cornstarch to thicken or thin the mix. Once you have a good consistency, use a funnel to pour a little bit into the bottom of your popsicle mold. These are the exact molds I used for this recipe. Place them in the freezer for about 30 min to set up, then move onto the next color. Repeat in any pattern you like leaving about a 1/4″ at the top of the popsicle to allow for the liquid to expand while freezing. You will want to gauge when to put in your popsicle sticks so the liquid freezes around them as well.
Serve these homemade popsicles on the 4th of July or all summer long!
