I have been making these no bake cookies since my kids were little, so over 20 years!
Before that, these were a frequent dessert in our home where I grew up.
They are also called easy no bake cookies, chocolate oatmeal no bake cookies,
I think these are so popular for so many reasons!
1- They are so simple to make, easy peasy!
2- No hot oven needed, so these are perfect for summertime.
3-These store well in an airtight container.
Now, there is a couple common mistakes people make when making these, and I will let you in on the secret, so you don’t make the same mistakes too! I have done these before and they won’t turn out, so keep reading.
The first mistake is not boiling them for a full 60 seconds. This will result in sticky cookies that won’t set up and you’ll have to toss them as they stay a gloopy mess. Make sure you set your timer to 1 minute after the mixture comes to a full boil, not just right when you see the first bubble. And don’t stir it during this 60 second interval.
The second is the type of oatmeal you use. You’ll want to use QUICK OATS. It should say this on the package. This is an example of quick oats.

What you need to make these-
- 1/2 cup salted butter
- 1 3/4 cups white granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2/3 cups creamy peanut butter
- 3 cups QUICK OATS {don’t use old fashioned oats)

You can use parchment or wax paper or muffin liners for these cookies.

In a saucepan over medium heat, combine butter, sugar, cocoa, and milk.

Cook stirring frequently until it reaches a FULL boil.

Allow mixture to boil 60 seconds without stirring.

Remove from heat, immediately add in vanilla, peanut butter and quick oats, and stir until combined
- Scoop using an ice cream scoop onto your wax paper or muffin liners.
- Let sit on counter at room temp until set, around 30 minutes.
- If you need these to set up faster, please place them in the refrigerator.
