I found this great crockpot French onion soup recipe from Half Baked Harvest. If you have never heard of them, you must check them out. They have one of my favorite cookbooks too. If that interests you, you can find it here. This soup turned out so good and this time of year I just love cooking in the crockpot.
Do you remember this great crockpot I bought? It is on sale right now! I like this recipe a lot because you throw a few ingredients into the crockpot and let it cook overnight. Then the next day you have just a few simple steps to complete this delicious warm winter soup. I opted to not do the bread on mine and just serve it on the side. I also like serving it with crusty grilled cheese sandwiches, but it is also delicious on its own. If you don’t have a crockpot, simply follow these steps to cook on the stove:

Heat a large heavy bottomed soup pot over medium-high heat and add the butter. Add the onions + brown sugar and cook about 10 minutes, stirring frequently, until softened. Add the worcestershire sauce and let it cook into the onions. Continue to slowly cook the onions until they are golden brown and caramelized, about 10-15 minutes.

Once the onions have caramelized, add the garlic and cook 30 seconds, then stir the flour into the onions and add the beer (or wine), beef broth, bay leaves, thyme and a good pinch of pepper. Cover and cook over low heat for 30 minutes or until ready to serve. Taste and season with salt + pepper if needed. Continue with the french toast as directed above.
