I am so excited to share this refreshing & healthy cauliflower summer salad recipe with you today.
I have to admit that I am not a huge fan of potato salad. But this is a great alternative, and I bet you that you can turn non cauliflower eaters onto this and they will love it too!
The recipe is below but I will add, to save on time you can cook the red fingerling potatoes and the cauliflower ahead of time, say the night before, and have them in your fridge ready to go.
Then all you need to do is add a few more ingredients and toss the dressing on.

Cauliflower & dill “potato” salad
Ingredients:
- SALAD:
- 2 heads cauliflower, cut into bite-sized florets and steamed until tender and cooled. I like to use 2 different colored. For example, 1 white cauliflower, and one yellow or purple cauliflower. It just makes the salad prettier.
- 1 1/2 cups red fingerling potatoes, cooked and cooled.
- 2 ribs celery, minced
- 1 small red onion, minced
- ¼ cup minced fresh dill
- ¼ cup minced fresh parsley, + more for garnish
- DRESSING:
- 2 Tbsp Apple Cider Vinegar
- 1 1/2 cups Primal Kitchen mayoor your mayo of choice
- 1 Tbsp yellow mustard
- ½ tsp black pepper
- ½ tsp salt
- Juice of ½ lemon
Instructions:
- In a large bowl, gently toss together your steamed cauliflower, fingerling potatoes, celery, onion, dill, and parsley. Set the mix aside.
- In another bowl, whisk together the vinegar, mayo, mustard, black pepper, salt, and lemon juice to make the dressing.
- Next, fold the dressing in with the cooled vegetable mix until your veggies are evenly coated. Garnish with parsley and serve chilled.
